Early books and booklets about the uses of corn shout “war” to me. Indeed, this book was published in 1917. The flyleaf has the following prose taped onto it: “In view of the threatened shortage of wheat, the important part to be played by our great national product, corn, in supplying the needs of the world, is strikingly evident. The present book contains a full series of recipes of dishes made of corn, some sufficiently light and delicate for an invalid, others of a substance suited to meet the demands of hard labor in the field.”

The author was formerly Commissioner for the State of Nebraska. This is CR 1917 by CJM, so it is not immediately apparent how this is a rev. ed. JYN wrote the foreword and says she revised the recipes and added new ones. “1887. [T]he United States Department of Agriculture under Secretary Rusk's administration made an effort to disseminate information abroad concerning the value of Indian corn as a food, by sending a special agent, Mr. Charles J. Murphy, to Europe,...” “[I]t is confidently believed that the persistent and judicious work of Mr. Murphy will result eventually in a decided increase in our export trade. With a firm belief in the value of Indian corn as a food, he has sacrificed much of personal fortune and time to properly present the merits of this grain to the several European governments. Mr. Murphy will never reap the reward he deserves for the service he has bestowed upon American corn growers[.]” The original (1890?) may have been connected to an exhibit promoting corn in the British Isles: “Murphy, Charles J. American Indian corn (maize) as a cheap, wholesome and nutritious food. Lecture delivered by Charles J. Murphy before the National Agricultural Society of France at the International Congress of Millers, held at Paris in August, 1889. Edinburgh, Scotland: R. Grant & Son, 1890, pp. 97; paper.” [The origin of this quoted material is Indian Corn Culture by Charles Summer Plumb. Chicago, Breeder's Gazette Print, 1895.]

It will be interesting to peruse this book.
