We just returned from vacationing in the Ozarks where we stopped at this German Inn & restrauant. Have you ever had something out and you can't get it off your mind? My husband would never touch sauerkraut but the server said she only had 2 people not like it in over 2 years....It was amazing! It was pork based, looked rather like tomatoe soup, and had hungarian paparika in it. Anyone have a recipe such as this? I'd be so grateful.

My mother makes a tomato-y sauerkraut soup using the bone from a pork roast. While it lacks paprika, it is a very tasty soup. The recipe is as follows:

1 cooked pork roast bone with some meat on it
1 medium onion, chopped
2 carrots, chopped
2 celery stalks, chopped
3/4 cups pearl barley
2 cans tomato soup
1 27 oz can & 2 14 oz cans sauerkraut, drained & rinsed
parsley flakes, salt & pepper

Saute onion, celery, carrots in a little bit of oil at the bottom of a large soup pot until tend. Put bone into pot and cover with water. Add salt, pepper, and parsley. Bring to a boil for 5 min. Add sauerkraut and bring back to a boil. Add barley and again bring to a boil. Turn pot down to a simmer. Add tomato soup. Cook about 2 - 3 hours or until the meat falls off the bones. Remove bones. Serve.

lagardner, oh yay! We love to try all kinds of soup and this one has rather haunted us. Thank you for your mothers recipe, anxious to try it.
