What's on your Christmas menu?

We have a turkey for Thanksgiving and a ham for Christmas. I'll make 10 lbs. of scalloped potatoes and some of my homemade horseradish mayo for those that want to eat that ham on buns (my sons!). I'll have Italian green beans with bacon, onions, and fresh dill, along with a veggie tray. In the crockpot I will have some sweet and sour meatballs. For sweets I will have peanut butter fudge, chocolate fudge, peanut brittle and a dessert with a shortbread base with chocolate pudding, whipped cream, cream cheese, topped with nuts and hot fudge. Neither of my daughter in laws can make jello, so we assign them things such as chips and dip, paper plates/napkins, drinks, etc. There will be a total of 14 at my house.

Unfortunately my husband was diagnosed with the flu (not Covid) today so our Christmas dinner will be delayed well into January. I'm hoping against hope that I do not get it. He has an incredibly high fever. splitting headache, and is wheezing. The only thing the doctors can do is advise him to take Vitamin D and Tylenol. He's not severe enough for hospitalization, yet.

Sorry to hear about your husband. My thoughts and prayers are with you both, and the family.

My wife has gone to her home village about 400 km away to be with her extended family for Christmas - Kenyans tend to wear masks and sanitise their hands but not to worry too much about gatherings. There'll be about fifty relatives there and roast goat will feature prominently on the menu, as well as matumbo, a delicious stew made from the goat offal.

I've been excused family Christmas duties this year so I'll be at home with the dogs and cat, but will go to one of our neighbours for Christmas lunch. Home-smoked ham will be the centrepiece, I believe. This morning I found black (blood) pudding in a supermarket, so at some point I'll treat myself to a full English fried breakfast, with bacon, sausage, egg, tomato, potato, mushroom and black pudding. My sister used to run a bed and breakfast in Wales and she used to tell me that within the British B&B industry a full breakfast had to include at least six different items, so I think mine will pass the test!

I’m working with only a microwave and crockpot this year, waiting for a gas line installation. And I’m usually with few ideas. Daughter, who loves to cook usually; is burnt out and refuses to think about it. I hope to pick up a ham today and use her oven. Other than that, we’ll piece together bits of this and that to make a festive table for the four of us. Cordial and wine to cover any holes in the menu.
Both daughter and SIL had a mild Covid bout earlier in the month. I too hope your husband recovers quickly, Tess.

Not sure yet.

It's just me and one sib, and she's a vegetarian. So possibly a mushroom/spinach lasagna. Maybe latkes.

For the first time in over 30 years we will be going to my mother-in-law's for Christmas. She is 98 years old and living in her home with my husband's brother and his wife.

For Christmas Eve dinner it will be a simple broccoli cheese soup with egg salad sliders. Christmas morning is a breakfast casserole and fruit. Dinner will be filet mignon with green beans, hashbrown casserole, salad and whatever dessert my sister-in-law brings. The next morning will be leftover casserole, biscuits with smoked sausage and smoked ham.

Today, I go to the grocery store and this afternoon will be cooking and prep work.

Our children will spend the day in their own homes which are near to us and I will miss them terribly. Husband is taking them their gifts today.

This is NOT our normal Christmas routine, but a Covid 19 Christmas.

Roast chicken, creamed corn casserole (tradition), mashed red skin potatoes, crescent rolls.

Also a fabulous whipped cream, marshmallow, pineapple, walnut, pistaschio pudding concoction lovingly known as "That Green Salad."

Day before Christmas Eve I had 2 year old grand baby over helping me in the kitchen. We made a four layer concoction of graham cracker crumbs, cream cheese, chocolate pudding, whipped cream and grated chocolate with the name of “dessert crap” which came with the recipe from a South African friend. Theia approved and did an excellent job of licking spoons and spatulas.

We ended up having a spinach & mushroom lasagna, and a salad.

We had the latkes yesterday.
