>1 lesmel: Of that list, I have read (and own) An Everlasting Meal, good reading and helps one to relax in the kitchen and stop throwing so many wonderful flavors into the garbage.
Also own The Joy of Cooking, which I read ages ago. Full of good information for a cook on ingredients and why they behave the way they do.
I've yet to watch/read the Salt, Fat, Acid, Heat books/shows.

I have many cookbooks, but seem to really use just a few.All of Ina Garten`s, the Silver Palate, Saveur and Bon Appetit.

Ah sweet - that An Everlasting Meal is the cookbook I was looking for in another thread. With Chapter 1 on boiling lol.

>6 Settings: Were you the one looking for the cookbook about boiled vegetables?

Yep. I'd only read a few pages. It starts with the author's great love of boiled vegetables.
