About the Author
Donaldo Soviero is the founder and director of the Cooking School of Umbria, located outside of Perugia in Italy. He has more than thirty years' experience as a restaurateur, hotelier, and food consultant. He has owned and operated more than ten restaurants, was consultant to the five-star mostrar mais Duesenberg restaurant in Denver, and was director of the Hotel and Restaurant Management School at the University of New Mexico.
