The Hollyhock cooks use the garden as the starting point for their meals, featuring fresh veggies, herbs and greens that were picked only hours before eating. One meal a week features a fresh salmon dish (the fish haven't had time to forget they were swimming by the time you sit down to eat) and the oyster bake on the beach of the Strait.
