175. 2nd ed. Georgina Ward Countess of Dudley (1846-1929) was a Scottish noblewoman of reputed beauty, who wrote passionately about keeping her home at Witley Court. Recipes herein reflect a life in the Scottish countryside: cutlets of wild rabbit, poularde aux truffes, jugged hare, spatchcock of grouse, chaud-froid of pheasant, etc. A Second Dudley Book of Recipes pub 1914.
